The tapered blade of the Kai Shun Kiritsuke is suitable for chopping, paring, portioning, slicing and filleting. The Kai Shun Kiritsuke effortlessly cuts juliennes, cubes or brunoise and is suitable for portioning boneless meat and especially fish. The angled blade tip is the shaping feature of the Kiritsuke. After cutting, it is used to lift the food with the blade like a spatula and place it in the pan.
