The matcha comes from the main island of Honshū, from Shizuoka Prefecture, and has a mild but very aromatic taste with a subtle sweetness.

Only the best leaves from the first harvest are selected for matcha production. As soon as they have been picked, the leaf stalks and leaf ribs are carefully sorted out of all the tea leaves. This tea, now known as "tencha", is ground into the finest powder in a slowly rotating granite mill. In one hour, just the amount of a small tin is produced - around 30 grams.

The traditional preparation of matcha:

• Usucha tea: place 1-2 bamboo spoons (½ teaspoon) of matcha in a bowl, fill with approx. 80 ml of 80°C hot water and whisk lightly with a bamboo whisk until frothy.
• Creamy koicha: double the amount of matcha and halve the amount of water. Beat the creamy mixture with a bamboo whisk for 15 seconds until frothy.
